Red Velvet S'mores Bars

There's nothing better than s'mores during the holidays. There's something whimsical about sitting out by the fire with family friends when it's cold outside. These aren't your typical s'mores though. I'm giving you all the goodness about s'mores, the gooey marshmallows, the melted chocolate, the graham cracker texture but we're adding in some brownies, red velvet and a sprinkling of peppermint, plus there's no need for a fire. Although, they are the perfect  treat for sharing.

The holidays are always crammed with gatherings, from friends coming over to spread the cheer, cookie exchanges, holiday dinners and more, it can be overwhelming making something each time from scratch. What I LOVE about these bars is they are so quick and simple to make, you'll spend more time eating them with friends, than making them. 

I modified a recipe from my good friend over at Picky Palate. What I did was sub out the chocolate chips for Dove Milk Chocolate Promises, which added a creaminess to the layers of the bars. To top off the bars, I added in some M&M’S Peppermint White Chocolate, to have more of a holiday flavor throughout the bars. M&Ms and Dove bags are great for baking and holiday parties! They're super simple to sub into so many recipes and you'll get a great flavor from baking with them. Plus, you could make some of these and they could be the perfect add-on gift for friends, family, neighbors or co-workers!


1 brownie mix 9x13 size

7 full sheets graham cracker

1 cup  Dove Milk Chocolate Promises

2 cups mini marshmallows

7 ounces sweetened condensed milk

1 bag of M&M’S Peppermint White Chocolate

Top layer

1 box Red Velvet Cake Mix

1 stick melted unsalted butter

1 large egg

3 tablespoons canola oil


Preheat oven to 350 degrees F. and line a 9x13 inch baking dish with parchment paper.

Prepare brownie mix according to package directions and pour into bottom of prepared baking dish. Layer with Sheets of graham crackers, Dove Milk Chocolate Promises, marshmallows and drizzle evenly with sweetened condensed milk.

In a large mixing bowl, add red velvet cake mix, melted butter, egg and oil, mixing until dough forms. With a cookie scoop, scoop dough over marshmallow layer then press dough so it's flattened. Sprinkle the top with M&M’S Peppermint White Chocolate. 

Bake for 45-50 minutes, until baked through. Let cool completely. Takes a few hours. Best if prepared at night then let cool overnight. When cool, cut into squares and serve.
