Recipe: One Pot Meatballs and Spaghetti


This is crazy for someone like me to cook so much at home. Granted I do love it and baking gives me a sense of relief from anxiety. There's something therapeutic about the process. I'm not going to pretend that I'm a Chef, I'm still someone that loves to eat (and wishes I was eating at all those incredible restaurants still).


So these recipes that I'm posting, they aren't meant to be fancy, they aren't meant to blow your mind. These are recipes that are simple, delicious and can feed the family or give you some leftovers. These are recipes that have minimal ingredients and hopefully ingredients that you can easily find. I also try to incorporate local ingredients into these too.


I'm also not one of those people that wants to read about how your day was or a huge long blog post with tons of pictures in it, when it comes to a recipe post. I scroll all the way down and get to the recipe.


Sauce

  • 1/2 onion chopped

  • 2 fresh tomatoes, I got mine from Uptown Farmers Market

  • 2 tbsp tomato paste or Sauce, we couldn't find tomato paste

  • 1 tsp sugar

  • 1/2 tsp garlic powder

  • salt and pepper taste

  • 8 ounces Sonoran Pasta or any kind of pasta

Meatballs

  • 1 lb ground beef

  • 1/2 cup breadcrumbs, I didn't have panko at the time but you could use panko too

  • 1 large egg, we use Hickman's Eggs

  • 1/2 tsp salt, we use True Salt

  • 1/2 tsp garlic powder

Combine the onion, tomatoes, tomato paste, sugar, garlic powder, and salt and pepper and add 1 cup of water into a large pan, big enough to fit the meatballs and pasta too. On Medium high heat, bring this mixture to a slow boil and then cover and lower the heat and let it simmer.


During this time, make the meatballs by combining the beef, breadcrumbs, egg, salt, and garlic powder in a bowl. Shape the meat into balls and set aside.


Once the tomato mixture has thickened up a little bit about 15-20 mins, add the meatballs and keep it on a low heat. Cover the pot again and let this simmer until the meatballs are fully cooked and the sauce has come together.


Cook the pasta according to the directions they give you. You'll add the pasta into the sauce and meatballs and stir everything together to get it coated with the sauce. Then serve!
