Vegan Birria! Yeah, It Exists, And It's Good.



Picures of birria got everybody drooling on the 'gram! Tacos dripping with juicy meat dipped in consumme and devoured in one or two bites because they are so damn good. Taco loving carnivores delight, but we know all you vegetarians and vegans have got to be dreaming and drooling about these tacos too.


Thank goodness the fine folks at Tacos Micho have kept the non-meat eating masses in mind when creating their menu. Raul Guerrero Jr. and his wife Evelyn Contreras started their business in Southern California in 2017. “We wanted a way to cater my wife's marketing events,” said Guerrero. “After having so many of our friends and family asking us to cater their special events, we knew we had something special.”

Prior to opening the Tacos Micho pop-ups, Guerero worked as a corporate chef so he knows his way around a kitchen and that is apparent in the delicious food he is serving up. It's authentic and traditional but they have given it their own twist.

“My background runs deep within the culinary industry,' he said. “I'm a classically trained chef and have worked in everything from large restaurants to gastro-pubs.”


The most popular menu items at Tacos Micho are the Birria de Res (beef birria) and the Vegan Birria. They use cactus, potatoes, soyrizo and hibiscus flowers for the plant based options. We have to say those vegan options are so deliciously seasoned and hearty meat lovers will not miss the meat!


“Most of our recipes have been handed down to me by my father and my aunt,” said Guerrero. “They both had restaurants and they entrusted me in carrying over their recipes. I want to pass them down to future generations as well.”


Folks, these are recipes to be cherished, authentic and delicious Mexican food best shared with people you love. “It is an honor to provide my customers with a taste of my childhood home and our business has allowed for us to do that,” said Guerrero.

In addition to honoring his family heritage, Guerero finds inspiration for his food through local suppliers and always tries to cook with what is in season. This helps ensure the food is always fresh. Everything from their marinades and salsas is made from scratch daily even the meat they use is butchered in house to ensure superior quality and freshness.

“We pride ourselves in knowing that all of our products are locally sourced and produced,” said Guerrero. “Even our tortillas are sourced from a local tortilleria in Phoenix. It took a long time to find the perfect products and we are so lucky to have finally been able to find them. And because Tacos Micho serves both meat and plant based options they work hard to ensure there is never any cross contamination. “This is something we take to heart and would like for our clients to know that we care about their meal and how it is prepared,” Guerrero said.


This kind of attention to detail is what sets Tacos Micho apart.


Tacos Micho currently sets up pop-ups mostly around the west valley and is looking forward to expanding into the central and east valley.
